Commentaires : Cookware began to be manufactured with the improvement of iron and bronze extraction methods. The high cost of these techniques however meant that cookware was adopted slowly. By the seventeenth century, however, households owned multiple pots and pans. In North America, the production of these pans often fell to the local blacksmith. The metal used in cookware ideally needs to conduct heat well, be non-toxic, be chemically non-reactive, and mould easily. Cast iron is used because of its ability to withstand high temperatures and heat evenly. The metal, however, is slow to heat up and can react with high acid foods. In addition, the metal is porous and rusts easily; seasoning is used to prevent rusting. The process involves cleaning the metal, oiling it, and heating it to bond it to the metal.
